Baby, Hero, Fire, and I went on vacation to California. Lots of fun. But now it’s time to kick off summer at home.

When you are in CA to visit your G-ma.
Now that we are home, it’s time to start cooking again. Last night’s dinner, Sheet Pan Hawaiian Pineapple Chicken by Jamie Cooks It Up, is a favorite for Chef and Dad, and one of Baker and Fire’s least favorite dinners. (Baker doesn’t like pineapple; Fire doesn’t like bell peppers, nor onions you can see in your food.)
We’ve been doubling the recipe, but with the fridge MIA at Dad’s work and Grad busy with roller derby and engaged life (yes, her boyfriend proposed to her on her graduation day!), and with Tech living out-of-state, I’m going to have to adjust the servings needed for a lot of our meals. We had a whole sheet leftover last night.
Chef made the dinner and Baker made the rice and both of them did dinner prep.
I always struggled with getting my rice just right. Chef and Baker inherited this deficiency. But ever since we discovered these instructions on How to Cook Perfect White Rice on the Stove by The Hungry Mouse our rice is always spot on. Last night was no exception.
Recipe Note: We always struggled to get the sauce for this thick enough, but Chef decided to heat it over high heat last night and just stir it constantly. It thickened beautifully and was perfect.

This dinner is a perfect one sheet summer meal, served atop rice, with some extra sauce poured over the top.
